Whey is recognised as one of the most versatile and interesting by-products of the food industry. More than 700 delegates, from around the world, representing the Processing, Food, Beverage, Nutrition and Packaging sectors of the business will attend the three-day conference.

From its state-of the art Davidstow Creamery in Cornwall – home to Cathedral City- Dairy Crest’s renowned and top selling cheese brand – more than 24,000 tonnes of Davidstow whey is produced annually.

A recent £multi million investment face-lift at Davidstow has included an up-to-the minute spray drier and evaporator for the production of whey powder. Vegetarian and Kosher whey is produced by Dairy Crest Ingredients at Davidstow and the company is currently seeking full approval for Halaal status.

Dairy Crest whey is produced during the manufacture of hard cheese (Cheddar) and is known as sweet whey and has an approximate pH value of 5.6 to 6.3.
